Do you know what these tasty little treats are?


If not i will tell you all about them. They taste exactly like those little square cheese crackers you get at the store….NO JOKE! But I made them. The texture is a little different, a little softer, not nearly as crunchy, yet AMAZING!

The recipe was included in the booklet i got with my Cookie Pro cookie press and here it is

1 lb. (natural not processed) sharp cheddar cheese or aged swiss finely shredded
(it said not to use pre-shredded but i did)
1/2 cup butter softened
2 teaspoons Worcestershire sauce
Dash of red pepper sauce
1 1/2 cups flour
1/2 teaspoon of salt
1 teaspoon of paprika
( i didnt have any on hand so i omitted it)

Preheat oven to 375*
cream cheese, butter , worc. Sauce and hot red pepper sauce together until smooth.
In separate bowl toss flour and seasonings together with a fork.
Gradually add to cheese mixture.
Mix until dough holds together.

Shape into small logs.

Now if you have a cookie press put it in and commence pressing as you would cookies BUT if you don’t have no fear….roll to about a 1/4 inch thickness and cut into 1 inch squares.

Place on ungreased cookie sheet for 10 to 12 minutes or until golden brown.
This makes about 4 dozen!

A Challenge

Sometimes after a major life event I take step back and see i have lost touch with some major area of my life. And sadly I am not super mom in any sense of the term!

Well about 6 months ago we moved into our new home. We love it. It is our home. But as school has started i have realized that i have let a few areas slip. The biggest ones I think are my four kids. I love them i take care of them. I provide them with what they need but my kids change often. I need to be a student of my children. What makes them tick?

So here is my challenge for myself……i am going to write bios for each one of my kids right here! I want to spend concentrated time with each one each day. Sometimes in the busyness of life and ministry get in the way of simple pleasures. So i will see you back here in the next week or two to share with you my joyful discoveries!

(PS don’t think i won’t be writing here between now and then 🙂 )

True Confessions of a Stay at Home Mom

Howdy. I am going to list 10 things most people don’t know about me! Now here’s the thing….you have to decide…are they all true, or if one, some or all are false. Leave a comment with what you think and tomorrow nite i will lat you all know!

1. I am a country girl through and through. I own a beautiful pink and white cowboy hat and brown cowboy boots with a lavender stripe.

2. I am absolutely petrified of thunderstorms. I have even been known to hide during them. I will not stand near windows to watch and i will not use water!

3. I have only ever been on one roller coaster in my entire life and that was when i was in China.

4. I plan on writing a book.

5. I have eaten some pretty nasty things….pigs ear, jellyfish, and silk worm.

6. I visited Ground Zero at the World Trade Center 7 months after 9/11, during a school missions trip to NYC.

7. Our family are huge history lovers. Hubby and i visited numerous battlefields, President’s homes, Williamsburg, Washington D.C. All on our honeymoon!

8. I have climbed the Great Wall of China AND seen the Copper mine in Utah. The only two man made objects (at the time) that you could see from outer space.

9. I hate heights. And am completely comfortable with that! I still fly!

10. I have held a Madagascaran Hissing Cockroach and LOVED every minute of it. It is my favorite bug.

Thankful Thursday- Blessing

All over the state of New York yesterday thousands of kids started school. Two of our children were no different! It is exciting for me as a mom to see my children start school each year and love it. But this year was a little different. Not because of school but because of what came before school…..a bus ride.

I used to ride a bus. It was really no big deal, but i rode with my age group, and when i switched to the local Christian school my senior year we had our own mini bus that the public school provided for the Christian school and the Catholic school to share. But since we have moved. We now live within the 15 miles required by a school district to receive bussing for our kids , which would be great…….BUT our kindergartner and first grader would have to ride with high schoolers from the public school district we live in. That concerned me…A LOT!

So i prayed…A LOT! Well it all came down to yesterday. We had talked about riding the bus and do’s and don’ts. One problem though….we hand’t heard from the school district about when the bus would arrive. So we got up early and waited and waited and waited some more….from 6 am to 7:10 am when hubby called the bus garage to see if he could figure something out.

What we found out brought tears to my eyes and joy to my heart! The school district had enough students to our local Christian school to warrant their own vehicle with no extra transfer point at the high school. All along i was praying for God to protect the hearts and minds of my children. I never asked Him once for their own vehicle. God did just that he protected their hearts and minds the best way possible, which was totally outside my line of sight. I serve a big God in whom I love!
